2 cups boiling water
4 eight ounce packages of instant grits
2 eggs, beaten
2 T. milk
red pepper (to taste)
1 cup grated sharp cheddar cheese
1 stick of butter

Directions:
Directions:
Pour grits and cheese into a bowl. Add 1 stick of butter. Pour boiling water over the cheese, butter and grits, then stir to mix well. Add a couple of tablespoons of the grits mixture to the beaten eggs and stir. Add milk to this, then pour it back into the grits mixture and stir quickly. Pour into a casserole dish and bake uncovered for 45 minutes.

I have never had these things actually be ready in 45 minutes, but that's what the recipe calls for. Just keep checking them until you like how they look. They will rise like a souffle.
