For the Schnitzels:

4 boneless pork loin
Salt to taste
Pepper to taste
2 tablespoon Paprika

For the Gravy:

1 small carrot
1 small onion
1 tablespoon flour
3/4 - 1 can 6 oz tomato paste
1 can 4 oz mushrooms drained
3/4 - 1 cup water
1 bouillon cube or 1 tsp granular bouillon (to taste)
1/4 cup white wine
2 tablespoon sour cream

For Schnitzels:

Pound pork loin with a meat tenderizer to flatten them (wrap pork loins in plastic wrap use flat side of tenderizer).

Salt, Pepper and Paprika each schnitzel both sides and place in pan.

Heat 2 Tbs of oil in skillet and sauté schnitzels on each side 3-5 min. Or until done

For the gravy:

Sauté onion and carrots.

Add flour and cook for about one minute.

Add tomato paste and mushrooms

Add water and bouillon bring to a boil let simmer for about 5 minutes until sauce thickens. Reduce heat.

Add wine and stir in sour cream.

Add schnitzels to sauce and serve.
