4 Slices white or wheat bread with crusts trimmed, or ½ cup dry bread crumbs.
½ tsp dry mustard
½ tsp Chesapeake-style seafood seasoning AKA Old Bay
¼ tsp Accent
1 egg, beaten
½ cup mayonnaise
½ tsp lemon juice
½ tsp Worcestershire sauce
1 lb. crab meat, shell and cartilage removed.

Mix bread crumbs, mustard, seafood seasoning, and Accent together and set aside.

In another bowl, gently fold together egg, mayo., lemon juice, Worcestershire sauce and bread crumb mixture. Add crabmeat, and shape into individual cakes.
(I use a 1/3 or 1/2 cup measure sprayed with oil. Fill cup measure and tap upside down onto wax paper to get good shape)
Refrigerate for at least 2 hours before cooking. (or freezing)

Place under broiler and broil till brown. I usually flip them about 1/2 way thru to get a nice brown crust on both sides. Only takes a few minutes...

Great with home made tarter sauce!

Easy to make ahead- they freeze well. Just wrap individually after two hours in fridge and place in freezer bag. Defrost in fridge and broil as above.
To use as appetizers just make smaller cakes, and serve on lettuce beds for easy pick up!
