2⅔ cups flour
⅔ cup sugar
⅛ tsp. salt
11 tbsp. butter (1 stick plus 3 tbsp.), softened
1 egg, beaten (add one yolk if prefer softer dough)
2 tsp. lemon zest or 2 tsp. vanilla extract
6-7 oz. jar of jam of choice - may use more than one flavor

Directions:

1. In a large bowl mix flour, sugar and salt.
2. Add egg and blend together.
3. Add butter and grated lemon zest or vanilla extract and form into a ball.
Total weight of dough is 1 lb. 8 oz. Set aside 8 oz. of dough to roll in strips.
4. Line 10 inch tart pan (with removable bottom) with parchment paper.
5. Spread remaining dough evenly on bottom and up sides of pan.
6. Chill in refrigerator for 2 hours.
7. Once the tart has chilled, poke holes with a fork all over crust.
8. Preheat oven to 350º.
9. Spread a thin layer of jam evenly on crust. Use 1-3 flavors of jam. See photo.
10. Roll dough that was set aside into strips. Place over the jam crossing one way.
Then place at an angle so that it looks like lattice on top.
11. Bake 40-45 minutes until top crust is golden brown.
12. Remove from oven and place on rack to cool completely.
13. Remove the tart from the pan and cut into wedges or squares.

Crostata is another recipe from cousins in Italy. It is a rustic jam tart and is eaten all over Italy for breakfast, as a snack or dessert after dinner. The delicate flaky crust is filled with your favorite choice of jam. It is one of Italy's most popular recipes. It has become one of our family's most popular as well. The photo illustrates each step as it is prepared: the Crostata after refrigerated with holes poked - top left; after jam is spread - top right; after strips are placed then baked - bottom left; finally after cut into squares to serve - right.
