1 7-8 lb fresh turkey breast or frozen and thawed
Any commercial poultry rub
Canola Oil

Brine Ingredients:
1 cup kosher salt
1/2 cup brown sugar
1 gallon water, divided

For the smoker: Use favorite fruitwood

Directions:
Directions:
To Brine the turkey breast:

Add brown sugar and kosher salt to 1/2 gallon of warm water till dissolved. Add remaining water. Place turkey and brine in a large bucket and refrigerate overnight.

Remove turkey from brine and rinse under cold water. Dry off and canola oil and rub. Place on en electric smoker with the fruitwood and smoke for 45 minutes a pound. Remove from smoker, let rest and carve.
