2 t. unflavored gelatin
1/4 c. cold water
1 c. mayonnaise
4 hard-cooked eggs, shredded
1/2 c. diced celery or fresh green cucumber
2 T. diced green pepper
2 T. pickle relish
1 T. diced pimento
1 T. lemon juice
3/4 t. salt

Directions:
Directions:
Soften gelatin in cold water for 5 minutes. Heat over boiling water and stir until dissolved. Cool. When thickened add remaining ingredients, pour into mold, and chill.

Serve with additional mayonnaise and garnish with tomato slices, cucumbers and carrot curls. Place center slices of boiled eggs around outside of dish and add 1/2 c. cooked peas, if desired.
