(Hugely modified from the recipe off the tortilla chip bag)

8 cups of chicken broth (I usually make my own from a BBQ chicken carcass) or use 2 tetra packs
1 can (28 oz) chopped diced Italian tomatoes with herbs and spices
3 Tbsp butter
1 large onion
2 cloves of garlic
1/4 cup chopped parsley
1/4 tsp. crushed red pepper (spice)
4 Tbsp. Chicken Bouillon Paste (brand: “Better Than Bouillon” recommended)
1/2 cup salsa
3 cooked chicken breasts seasoned with Italian spices (about 3 cups chopped)
1 can black beans
1 cup frozen corn

Directions:

Heat or make chicken broth (medium heat).
Add stewed tomatoes.
In a fry pan melt butter and sauté diced onion and garlic until soft. (Don’t brown)
Add to chicken/tomato mixture.
Add chopped parsley, crushed red pepper, Boullion, and salsa.
Purée mixture until smooth using a Braun hand mixer.
Simmer mixture for 10 minutes.
Add chopped chicken, black beans and frozen corn.
Simmer 15 minutes.

Soup is delicious as is or can be garnished with cilantro, sour cream, avocado, grated cheddar or Monterey Jack cheese, and tortilla chips. Now don’t lick the page!

After a cold day skating on the ice in Invermere Will whipped up a delicious batch of Aztec Tortilla Chip Soup and shared his recipe. It was so well received and just what we all needed. I decided to amp up the recipe after tasting a chicken version of tortilla chip soup at our local gourmet soup restaurant. I LOVE to accompany this recipe with cornmeal bread which is Ian’s favourite. This recipe has been so successful and is in high demand with every visit from the kids. Enjoy!
