2 Bonless, skinless chicken breasts
1/2 tsp salt
1/4 tsp fresh ground black pepper
Olive oil cooking spray
2 cups Marinara Sauce, jarred or homemade
4 oz Mozzarella, sliced thin
1/2 cup grated Parmesan Cheese

Directions:

1. Preheat oven to 400 F.

2. Sprinkle the chicken with salt and pepper.

3. Coat a large, oven-proof skillet with cooking spray and place over medium heat on cooktop.

4. Add the chicken and cook 4-5 mins until the chicken browns.

5. Flip chicken and cook 3-4 mins more (chicken will finish cooking in the oven).

6. Turn off the heat and carefully add the sauce.

7. Place one slice of mozzarella over each chicken piece and evenly sprinkle grated Parmesan on top.

8. Bake 12 - 15 mins until the cheese melts and chicken is cooked through.
