Ingredients: Shortbread Crust: 1/2 cup real butter 1 cup flour (can substitute GF flour if needed) 3 Tbsp icing sugar
Filling: 1 - 250g (8 oz) package cream cheese (softened) 1 package of lemon instant pudding (4 serving size) 3/4 cup milk 1/4 cup icing sugar zest of one lemon 2 Tbsp lemon juice 250 ml whipping cream 3 cups fresh fruit (banana, grape, cherry, strawberry, kiwi, peach, raspberries) 1/2 cup strained apricot jam 1 Tbsp lemon juice

Directions:Shortbread Crust: Cream butter with flour and icing sugar. Press dough evenly on the bottom and edge of a 13" pizza pan. Prick the dough with a fork and chill 30min in the fridge. Preheat oven to 375ºF. Bake crust 10 to 14 min or until light golden (watch carefully as burns easily). Cool thoroughly.
Filling: Combine apricot jam and 1 Tbsp lemon juice. Heat apricot jam mixture until liquid and strain. Set aside to use on top. Prepare pudding according to instructions on package using only 3/4 cup of milk. Beat cream cheese, icing sugar, lemon juice and lemon zest until smooth using mixmaster. Beat in prepared pudding. In a separate bowl, whip cream until stiff and fold into cheese mixture. Spread evenly on cooled, baked crust and chill while preparing fruit. Slice all fruit and cut grapes in half. Arrange fruit attractively in concentric circles (or your own design) on chilled filling. Drizzle apricot jam glaze evenly over fruit.
Chill and serve.

Notes: This dessert is very delicious and a great use for fresh fruit, especially in the Okanagan. Always a crowd pleaser as it is beautiful as well as tasty. Allows you to use your creative talents in the design. I always use my homemade apricot jam for extra goodness. A family favourite in the summertime.
