10 large, skin on, whole quail
1 ½ cups honey
¼ cup sea salt
1 tbsp chili powder
6 cloves garlic - minced
5 slices ginger - minced
10 sprigs of thyme - chopped fine stem removed
1 tsp all spice
1 tbsp onion powder
½ tsp nutmeg

Directions:
Directions:
Put quail and all ingredients in larger mixing bowl and mix well. Making sure to coat the quail evenly.
Place coated quail and remaining ingredients in an oven bag. Squeeze out air, tie shut, place bag in clean mixing bowl, and place in refrigerator for 2 to 3 days.
When time to smoke, pour contents in large straining basket and allow to drain for 5 minutes
Place in smoker, medium heat, for 1 hour.
Bring temperature to high for 20 to 30 minutes.
Bring temperature to low for 2 hours.
Place on serving tray and serve.
