1 Yellow Onion
1 Lime
3 tbsp. Garlic, minced
Brioche Buns
1 tsp. Paprika
1 tsp. Sriracha
1 lb. Ground Pork
Gouda Cheese
2 tbsp. Mayonnaise
2 tbsp. Sour Cream
2 tbsp. Butter
Olive Oil
3/4 tsp. Sugar
Salt and Pepper
Garlic Butter

- Halve onion and thinly slice. Mince a few slices of onion to reserve for pork.
- Cook sriracha onion jam: Melt butter in medium pan over medium heat. Add sliced onion, 1/4 tsp. sugar, salt and pepper. Cook, stirring until browned and softened, about 15 minutes. Stir in squeeze of half a lime and sriracha to taste.
- Combine pork, minced onion, 2 tbsp. garlic, 1/2 tsp. sugar, paprika. Form into patties, seasoning both sides with salt and pepper.
- Heat a drizzle of oil in pan over medium heat. Add patties and cook until browned. In last 2 minutes of cooking, add Gouda slices, cover until melted.
- In small bowl, combine mayonnaise, sour cream, remaining lime juice, 1 tbsp. garlic, salt and pepper.
- Spread garlic butter on buns and toast. Spread as much sauce onto buns, fill with patties and onion jam.
