Scallops , fresh or frozen (thawed in fridge for 2-3 hours)
You will need about 3-4 per person.

Prosciutto slices - cut in half lengthwise (So, for 16 scallops, you will need 8 slices of prosciutto.
Sun dried tomato pesto sauce

Preheat oven to 400 degrees
Line a cookie sheet with parchment paper for easier clean-up, or just use a baking dish.

Put scallops in a med. - large bowl. Mix in enough sun dried tomato sauce to lightly cover scallops.

Cut prosciutto in half lengthwise. Roll 1 scallop in each 1/2 slice of prosciutto, so that scallops can sit flat.
Place scallops/prosciutto on baking sheet. Add a small amount (about 1 tsp) of the sun dried tomato sauce to the top of each scallop.

Bake for about 10-15 mins. until scallops are cooked through and sauce is bubbling.
