Turkey stock
chopped carrot, onion, celery stalk, salt.

8-10 cu turkey chopped
turkey stock
3 c white wine
4 c sliced onions
herbs bouquet (8 parsley sprigs, 1 bay leaf, 1/2 tsp thyme)

Directions:
for stock: simmer bone in water with chopped carrots, celery, onion, salt for 2 hours. Strain and degrease.

Put meat in pan. Pour stock over. Add wine, onions, herbs, salt. Cover by one inch. Simmer. Skim off scum and cover and simmer for 1 1/4 - 1 1/2 hours. Meanwhile, precook 1-2 carrots, 3 small onions per person, 1 qt mushrooms. Set aside in cooking juildes. Pour meat into colander over saucepan. REturn meat to pan. Drain liquids from vegs into liquid and add vegs to turkey pieces. Degrease. You should have 3 1/2 c liquid. In other saucepan, melt 4 tbsp butter. Blend in 6 tbsp flour. cook slowly until foamy. Remove from heat. Pour all turkey liquid in and whisk vigorously. simmer 2 minutes. Whisk in 1/2 c cream. Boil, taste, add salt pepper and drops of lemon juice. fold sauce into turkey and vegs.
