1 lb. ground beef
½ c. chopped onion
1 pkg (1¼ oz.) taco seasoning mix
1 can (4 oz.) chopped green chilies, drained
1¼ c. milk
¾ c. Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded Monterey jack or cheddar cheese

Directions:
Directions:
Heat oven to 400º. Grease 10-inch pie plate. Cook beef and onion till brown; drain. Stir in seasoning mix. Spread in plate and sprinkle with chilies. Beat milk, baking mix and eggs until smooth, 15 seconds in blender or high for 1 minute with hand beater. Pour over beef mixture. Bake 25 minutes. Top with tomatoes and sprinkle with cheese. Bake until knife inserted in center comes out clean, about 8 - 10 minutes. Col 5 minutes. (Serve with sour cream, avocados, chopped tomatoes and shredded lettuce, if desired) Sometimes I substitute deer meat for beef.
