¼ cup vegetable oil
3 lbs lean ground beef
3 cups diced onions
1 large red bell pepper, seeded and chopped
10 cloves garlic, finely diced
2 jalapeños, seeded and finely chopped
5 Tbsp chili powder
2 Tbsp ground cumin
1 tsp paprika
1 tsp cayenne
3 Tbsp flour
4 Tbsp red wine vinegar
6 Tbsp tomato paste
4 cans chopped tomatoes
2 cups tomato juice
3 cups chicken stock
1 Tbsp chopped oregano
grated cheddar/chopped onion or scallions/sour cream for serving

Directions:
Directions:
Heat 2 Tbsp of the oil in a large heavy pot over high heat. Add beef and cook until browned. Strain over a bowl, reserving juices. Add remaining oil to pot. Cook onion, red bell pepper, garlic, and jalapeño in pot over high heat for 4 minutes stirring constantly. Turn down heat. Add spices and cook 1 minute. Return beef and 2 Tbsp reserved juices. Add flour and stir. Add vinegar, paste, tomato, tomato juice and bring to boil stirring constantly. Add oregano and stir. Turn down and simmer 5 minutes. Add chicken broth and simmer 30 minutes. Season with salt and pepper to taste.
