1 can English (green) peas
½ lb. processed cheese (Velveeta)
½ small jar pimientos
1 Tbs. finely chopped onion
Salt and pepper to taste
2 hard boiled eggs

Drain liquid from peas. Melt cheese. Combine the peas and melted cheese over a low heat. Avoid mashing the peas. Remove from heat and add chopped pimientos, onions, salt and pepper. Mix. Chill for several hours before serving. Garnish with sliced or diced hard boiled eggs.
