1 ½ lbs veal
Flour, salt, pepper
2 tbsp butter
2 tbsp oil
1 clove of garlic, sliced
1 small onion, sliced
4 oz can mushrooms (½ lb fresh)
1 cup chicken stock or bouillon
½ cup dry white wine
¼ cup tomato juice
⅛ tsp nutmeg
¼ cup Parmesan cheese
2 tbsp chopped parsley

Preheat pan to 350º. Trim skin and gristle from veal. Dredge in seasoned flour and pound thin. Cut into 1 x 3 inch strips. Melt butter, add oil and sauté garlic and onion. Brown veal on both sides. Removed garlic, add mushrooms, chicken stock, wine, tomato juice, and nutmeg. Reduce heat to 212º, cover and cook for 30 minutes, or until done, stirring occasionally. Add more liquid if necessary. Sprinkle with cheese. Cover and let stand about 10 minutes. Garnish with parsley.
