Escarole
4 tbsp olive oil
1 clove minced garlic

Directions:
Directions:
Boil escarole in small amount of water (1/4 of the way up the side of the pot) until escarole begins to become tender (fully wilted and mushy).

Fry 1 clove minced garlic in a separate pan in approx. 2 tbsp olive oil until lightly browned.

Drain escarole and return to pot immediately so escarole is still wet (do not drain). Add the oil and garlic to the pot. Add salt and pepper. Continue to cook under low flame until tender.
