2 english muffins
3 egg yolks
butter
4 slices Canadian bacon
4 poached eggs
2 tablespoons lemon juice
1/4 cup water
1/4 teaspoon salt
1/2 cup (1 stick) butter

Directions:
Directions:
For Hollandaise sauce: In a small saucepan, whisk together lemon juice, water, salt and egg yolks. Place over very low heat and cook, whisking constantly, until bubbles begin to appear around the edges. Do not allow mixture to simmer. Whisk in butter one pat at a time, until each is incorporated and sauce is thickened. Place saucepan over warm-not hot-water, while preparing muffins. Split muffins; butter and toast them. Heat canadian bacon in a skillet until heated and lightly browned. Place muffin halves on serving plates. Place a slice of bacon and a poached egg on top. Spoon hollandaise sauce over the top.
