1 lb ground beef
1 packet taco seasoning
1 (16 oz) can refried beans
1 can Condensed Cheddar Cheese Soup (Gluten Free substitute below)
1 medium onion (chopped)
1 can enchilada sauce
1 (4 oz) can Hatch Diced Green Chiles (Mild)
flour tortillas (GF option)
white rice

Substitute for GF Cheddar Soup:
3 tbl unsalted butter
3 tbl GF flour
1/4 tsp salt
1/4 dry mustard
1 c milk
1/2 c shredded cheddar soup

Directions:
Directions:
Heat oven to 350.

1. Brown beef & onion until well browned.
2. While beef is cooking, begin the GF cheddar soup. (If using canned, skip this step.) In separate small sauce pan melt 3 tbl butter, once melted whisk in GF flour for about 1 minute. Do not allow it to brown. When combined, add salt, dry mustard and milk and whisk until smooth. Once smooth, add the cheddar cheese and whisk until smooth.
3. Once beef is cooked, add taco seasoning, refried beans, green chiles, and cheddar soup and stir until well combined.
4. Divide mixture among tortillas. Roll up the tortillas and place seam side down. Pour the enchilada sauce over the filled tortillas and sprinkle with cheese.
5. Bake for 20 minutes. Serve with rice.
