Ingredients: 1 lb ground chicken ¼ cup celery, diced 1 clove garlic, minced ¼ cup crumbled bleu cheese Salt Pepper 1 Tbsp parsley, minced ¼ cup hot sauce (such as Franks Red Hot) 8 slider buns or 4 regular size buns

Directions:1) Preheat grill or pan to medium heat. 2) In a medium bowl combine ground chicken, celery, garlic, blue cheese, 1 Tbsp parsley, ¼ cup hot sauce (such as Franks Red Hot), salt, and pepper. Mix well until all ingredients are well combined. Form chicken into 8 patties for sliders or 4 patties for regular size burgers, about 1 inch thick. Refrigerate until ready to grill or cook in pan. 3) Place burgers on grill and cook for 3-5 minutes on the first side. Flip burgers and cook for an additional 3-5 minutes on the second side, or until cooked through. 4) If desired, brush buns lightly with cooking oil or butter and place cut side down on the grill. Toast for 1 to 2 minutes or until buns are lightly golden and toasted. To serve, top burgers with coleslaw, additional drizzle of hot sauce and add any desired burger toppings like lettuce/tomato/onion *Tip: forego the bun for a lower carb meal!

Ingredients: 1 (10-ounce) bag shredded cabbage (about 4 cups)* 1 cup shredded carrots 1/2 cup thinly-sliced green onions 2/3 cups non-fat plain Greek yogurt 1 tablespoon lemon juice 2 Tablespoons apple cider vinegar 2 Tablespoons honey, warmed 1 teaspoon Dijon mustard (optional) 1/4 tsp celery salt pinch of salt and freshly-cracked black pepper
*Or you could sub in 1 (16-ounce) bag of coleslaw mix, with the cabbage and carrots already combined.

Directions:1) Combine the cabbage, carrot and green onions in a large bow, and toss to combine. 2) In a separate bowl, whisk together Greek yogurt, lemon juice, vinegar, honey, mustard celery salt, and a pinch of salt and pepper until combine. Taste, and season with extra salt and pepper if needed. 3) Pour the Greek yogurt mixture into the cabbage mixture, and toss until evenly combined. 4) Serve immediately, or cover and refrigerate for up to 4 hours. |

Notes: I love anything buffalo! These are a great, healthier alternative to beef burgers. I personally love them without a bun and makes for a delicious, healthy meal paired with a salad or veggie!
Top with additional cheese, pickled red onions and/or coleslaw!
