Marianne's Apple Pie Recipe

Pie Filling


Ingredients:

6-8 medium to small Granny Smith apples
1½ cup sugar
3 Tablespoons flour
1 Tablespoon cinnamon
1½ teaspoon grated lemon peel
⅛ teaspoon salt plus a pinch more

Peel and cut apples into slices. Mix all of the above ingredients with the apples making sure to coat them all with the mixture and put it all in an unbaked pie shell (crust).
 

Pie Crust

1 1/2 cups flour
1/2 cup cold margarine
pinch of salt
ice water

Directions:
Directions:
Mix flour, margarine and salt in mixer. Slowly add ice water while the machine is going. When dough forms a ball put it in a 9" or 10" pie dish. Press it flat into a crust on the bottom and sides of the dish. Then add pie filling (see above).

ALERT!! EASIER WAY:
Marianne says, "Skip making the pie crust! I use a frozen pie shell that I place in my own 10" pie pan and adjust with my fingers. After the frozen shell has sat out of the freezer for a few minutes, you can easily move it and take pieces of it to fit whatever pan you are using. Just mash the seams together with your fingers."

Marianne says, "When I put the apple slices in the shell, I lay the slices down going around from the outside edge to the center. (A spiral). Just keep laying them on--filling in any spaces. I usually wind up with them piled higher in the center."
 

Pie Topping

1 cup flour
1/2 cup sugar
1 cup grated cheddar cheese, packed
1/2 cup melted margarine

Directions:
Directions:
Mix together and sprinkle over the top of the uncooked pie. Gently press the topping crumbles onto the filling.

Marianne says, "Using your fingers, sprinkle the cheese mixture over the apples. You can do the whole top, or if there are people who can't have the cheese, just put it over part of the top."

Bake pie for 40 minutes at 400 degrees. Place a pan under the rack the pie is on because often the juice bubbles out making a mess during baking.

Everyone LOVES this pie. Don't try to squeeze too many apples in because the pie will become runny.
