1/4 tsp salt
1/2 c boiling water
1 lb sole or haddock fillets
2 tbsp butter or margarine
1/4 c minced onion
2 tbsp flour
2 tsp curry powder
1 tsp sugar
1/4 tsp salt
1 dash of ginger
3/4 c milk
3 c cooked rice
1 c cooked green peas

Directions:
Directions:
Heat water and salt to boiling. Add fish, cover and simmer for 10 min. Drain. Reserve 1/2 c of broth. Break fillets into 2 inch pieces. Keep warm while preparing sauce. Melt butter in sauce pan, cook and stir onion in butter until tender. Stir in flour and curry powder, sugar, salt and ginger and cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir one min, then add fish. Mix rice and peas and pack lightly in greased six cup ring mould. Unmold on large serving dish. Pour fish sauce in centre of mould.
