1 Lb. Chicken Breast
2 Cups Salsa (Pace or similar)
1 Cup Grated Parmesan Cheese
1 Cup Mixed Cheddar Cheese (shredded)
Salt and Pepper, to taste
12-16 oz box Farfalle Pasta




Directions:
Directions:
Preheat oven to 375 degrees.

In 9x13 baking pan, use 1/2 cup of salsa and spread thin layer on bottom of pan. Divide chicken into eight (8) pieces and place on top of salsa layer. Season with salt and pepper. Top chicken with grated parmesan cheese. Top with remaining salsa, and then follow with remaining shredded cheese. Cover with foil and bake for 45 minutes.

Check chicken with meat thermometer and remove from oven when internal temperature reaches 165 degrees. Set aside and allow to rest.

Boil farfalle pasta until cooked and drain. Prepare plates with serving of pasta. Top with chicken and salsa. Add more cheese if needed (because... it's cheese).

This was a recipe I picked up at the bridal shower of my friend, Diana. It has evolved over time, but the family always loved it. Super easy and super yummy. :)
