4 Boneless, skinless chicken breast cut into bite size pieces
salt and pepper to taste
4 T butter + 2 T oil
2 c chopper onion
2 cloves garlic finely chopped or minced
2 T flour
4 T tomato paste
3 T sweet Hungarian paprika
2 c chicken broth
2 c sour cream

for garnish 1 T fresh parsley

Sprinkle chicken with salt and pepper. Saute chicken in butter and oil in 12" skillet over med heat until golden, 5-8 mins.

Remove chicken from skillet, and drain off all but 1 T of fat. Saute onion and garlic in fat over med. heat until lightly

brown, about 6 mins. Stir in flour, tomato paste and paprika until onions are evenly coated; then stir in broth. Return

chicken to skillet, and reduce heat to low. Simmer, covered until chicken is done 15- 20 mins, stirring chicken throughout

cooking. Remove chicken from skillet, and keep warm. Boil liquid in pan, stirring constantly, until slightly reduced and

thickened about 5 mins. Stir in sour cream over low heat. Return chicken to skillet and heat till chicken is hot 3-5mins.

Serve over egg noodles.
