6 medium sized Idaho Russet potatoes peeled and quartered
1/4 to 1/2 c heavy cream
8 tbsp unsalted butter

Directions:
1. Add 1 cup water to the pressure cooking pot. Put a steamer basket in the pot and place the potatoes in the basket. Lock the lid in place. Select High Pressure and 5 minutes cook time.
2. When the cook time ends, turn off the pressure cooker. Use a quick pressure release. When the valve drops, carefully remove the lid. Use a fork to test the potatoes. If needed, relock the lid and cook at High Pressure for a few minutes more.
3. Transfer the potatoes to a large serving bowl. Use a potato masher* to mash the potatoes until mostly smooth. Mash in the butter. Gradually stir in the cream. Season with salt and pepper to taste.

I like using a ricer for perfect mashed potatoes. You can mash till smooth and add more cream. I leave lumps so they know it's real, not instant.
