6 cups low-sodium chicken broth
1 cups diced carrots
1 cup celery, diced
cup onion, chopped
cup uncooked barley
2-3 cups cooked and cut-up chicken
1 can (14 oz) no salt added, diced tomatoes, undrained
tsp black pepper
1 ec bay leaf
2 tbsp fresh chopped parsley or 2 tsp dried parsley

Directions:
Directions:
Combine all ingredients except parsley in large kettle.
Cover and bring to boil.
Simmer, covered for one hour. Stir occasionally.
Just before serving, remove bay leaf and stir in parsley.
