8 each boneless, skinless chicken breasts
4 14 oz can diced fire roast tomatoes, or 6 cups fresh tomatoes
1 large onion thinly sliced
8 cloves garlic, pressed or finely chopped
1 cup balsamic vinegar
4 tsp each fresh spices oregano, basil, and rosemary
1 tsp fresh lemon thyme
ground pepper and salt to taste.

Directions:
1) Put a slow cooker liner in the slow cooker. If not using a liner, make sure to spray the cooker well with cooking spray.

2) Add chicken breasts, put onion on top of chicken, then put in all the fresh herbs, salt and pepper and pressed garlic loves. Pour in vinegar and top with tomatoes.

3) Cook on low for 8 hours.

4) Shred the chicken and serve over pasta, brown rice or quinoa.

5) Serve with a side salad.
