1/2 C shelled salted pistachios
6 oz. mascarpone or natural cream cheese at room temperature
6 oz. fresh plain goat cheese at room temperature
fresh ground white pepper
olive oil as needed
1/2 C finely chopped smoked salmon, packed
baguette slices or crackers.

In a small frying pan stir pistachios over medium low heat until lightly toasted and fragrant, about 5 minutes. Let cool for 2-3 minutes, then rub inside towel to loosen skins. Chop into small pieces.

In a small bowl combine cheeses. Season with pepper and stir until blended and smooth. Line a deep 3-4 cup rounded bowl with plastic wrap, leading edges hang over the sides. Lightly oil the plastic wrap. Spend 1/3 cheese mixture into ball and pack down firmly. Spread smoked salmon over the cheese, pack down and level top. Spoon another third of the cheese and pack down firmly. Sprinkle the pistachios evenly over the cheese reserving some for top. Spoon in remaining cheese, pack down firmly and level top. Cover with overlapping plastic wrap and refrigerate for 2-24 hours.

Preheat oven to 350°. Place baguette slices in a single layer and toast until dry on top about 5 minutes, turn and toast on other side until crisp on the edges with soft centers, about 5 more minutes. Transfer to wire racks and let cool. Unmold torta onto a serving plate, remove plastic and sprinkle reserve pistachios on top, and let stand at room temperature for one hour. Arrange baguette slices or crackers around torta and serve.
