1 tbsp. coconut oil, vegetable oil, or canola oil
3 c. fresh baby spinach
4 eggs
¼ tsp. dried basil
¼ tsp. cracked black pepper
¼ tsp. salt

Optional Ingredients to create variations:

Italian
10 Cherry tomatos (optional)
or 10 Sundried tomatos (optional)
¼ c. fetta cheese (crumbled) or mozzarella cheese (small squares)
drizzle of olive oil after cooked

Mexican
Cheddar cheese (grated)
Minced jalapeño (fine)
10 cherry tomatoes or small diced tomato
Avocado chunks

Preheat a large skillet with oil and make sure that you preheat it with the skillet lid on so that the lid heats up. When heated, cover the entire pan with the fresh spinach. Drop the eggs into different quadrants of the pan. Sprinkle salt, pepper, and basil over the eggs and around the pan. Cover with the lid and lower the temperature to below medium. I usually cook these very slowly because I like all of the egg whites to be steamed and well done. FOR VARIATIONS: Spread out the rest of the ingredients for your variation around the skillet and let it cook until the eggs are done.
