3 cups graham crackers crumbs
⅔ cup butter, melted
½ teaspoon cinnamon
3 tablespoons sugar
½ gallon (64 ounces) vanilla ice cream, softened
6 ounces frozen lemonade concentrate
1 cup whipping cream, whipped with 2 tablespoons of sugar
12 Maraschino cherries for garnish, optional

Mix graham cracker crumbs, butter, cinnamon, and sugar together in a bowl. Press ⅔ of the graham cracker crumb crust into a 9 by 13-inch pan. Set pan aside. Reserve the remaining crumbs to use later. Put softened ice cream and thawed lemonade concentrate in a large bowl. Beat with electric mixer until well blended. Quickly spoon mixture into the crumb-lined pan. Freeze for at least 2 hours or overnight. Just before serving, whipped the cream and sugar until stiff. Sprinkle with the remaining crumbs and top with the Maraschino cherries.

Variations: substitute pineapple-orange concentrate for the lemonade or limeade concentrate. When using limeade, add up to ½ cup cooled, toasted coconut to the ice cream mixture. Can also sprinkle the whipped cream with ½ cup cooled, toasted chopped nuts. Experiment with other juice concentrates.
