1 pound boneless skinless chicken breast chopped into bite-sized pieces

1 T vegetable oil

1 T minced garlic

1 small yellow onion chopped

2 T yellow curry powder

1 T Thai red curry paste

15 ounce coconut milk canned, full fat

1 T brown sugar

2 T lime juice

2 T butter

Salt to taste

4 cups cooked white rice for serving

1. Heat the oil in a large pot over medium low heat. Add the onions and minced garlic and cook for a few minutes until the onions are fragrant and softened.

2. Add the chicken and cook for 5-6 minutes, browning it a little. Add curry powder and curry paste; cook for 5-7 minutes.

3. Add the coconut milk, and let simmer for 15-20 minutes or until the chicken is fully cooked.

4. Add butter.

5. Stir in the brown sugar and lime juice. Taste and salt if needed

6. Serve over cooked rice.
