1 chicken cut into 8 pieces
3 cups all purpose flour
1 teaspoon baking powder
Red pepper Black pepper and salt
Peanut oil for frying
Few pieces of onion for frying

Directions:
Clean and dry chicken pieces with paper towel Cut slits in dark pieces of chicken Season with salt and pepper Refrigerate until ready to fry In large air tight bowl mix flour baking powder salt and pepper Get peanut oil hot before frying (check by dropping a pinch of flour in oil if it sizzles it’s ready) Drop a piece of onion in hot oil (also should sizzle) Dust chicken with seasoned flour mixture than carefully drop in hot oil ( do not crowd) Fry each piece of chicken until the juices become clear and become golden brown Flip and fry opposite side Remove chicken pieces and drain over paper towels
Note No dredging in egg or milk for this recipe The baking powder added to flour is what makes the chicken crispy Also only salt red and black pepper used in this recipe and not other seasoning containing garlic
