Hot Peppers in Oil

1 basket medium hot peppers (or hot if you like)

White cider vinegar
Many cloves of garlic, peeled
Dry Italian seasoning

Olive oil or Canola oil

Directions:
Clean and derib peppers. If you want more heat leave a little bit of the seeds and ribs.

With a food processor slice the peppers into thin rings. If you don't have a food processor wear gloves and slice the peppers in thin rings.

Put the pepper rings in a large Tupperware bowl. Add the dry Italian dressing and cover with vinegar but not to completely and seal with the lid. You can leave them out on the counter but periodically stir them around. You will see they will start breaking down but shouldn't loose their crispness.

The next day drain off the vinegar and place the peppers in hot sterilized jars. Place a clove or 2 of garlic in each jar and cover with hot oil. Slide a butter knife down the sides of the jar to release any air pockets. Seal immediately with lids. The lids should start to pop as the peppers & oil cool down.
