5 pounds Russet potatoes, unpeeled, washed, cut into 1/2 inch(ish) cubes
1 medium/large yellow onion diced
10 cloves of garlic minced
64 oz. chicken stock or broth
16 oz. cream cheese, softened
1 Tbsp. seasoned salt

Optional Garnishes:
Crumbled bacon
Shredded cheese
Green onions
Sour cream

Directions:
Directions:
Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.
Cook on high for 6 hours or low for 10 hours.
Use an immersion blender to blend half of the soup after adding the softened cream cheese OR remove half the soup and place into a blender with the softened cream cheese.
Blend until smooth, then pour back into slow cooker.
Stir well and top with your choice of garnishes.

This is a family favorite for watching football games and on Halloween. It can also be made in a 6-8 qt. InstantPot on the high-pressure setting for 15 minutes. Reduce fluid so it fits. Extras freeze well.
