1 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons white or brown sugar
1 egg
2 cups buttermilk
3 tablespoons melted butter or oil
1 teaspoon rum or vanilla
1 cup chopped rhubarb

Directions:
Directions:
Combine dry ingredients. Add egg, buttermilk, melted butter or oil, and desired flavoring. Stir until just mixed.

Heat skillet to 350º. Place a small dab of butter in the bottom of the pan, and swirl until melted. Drop by 1/4 or 1/3 cup measures into the hot pan. Drop rhubarb pieces on top pancakes. Cook until the edges are browning and the pancake is puffed and bubbly. Turn over, and cook the other side until golden.
