Cranberry Chocolate Chip Bars

1½ cups flour
1½ cups sugar
2 eggs, beaten
2 sticks butter, melted
2 cups fresh cranberries, chopped
¾ cup chocolate chips
1 cup walnuts, chopped

1. Preheat oven to 325º. Lightly spray a 9x13 inch glass pan with baking spray.
2. Mix flour with sugar.
3. Add eggs and beat together.
4. Stir in melted butter.
5. Fold in cranberries, chocolate chips and walnuts.
6. Pour into pan and bake 1 hour until edges are brown and center is set.
7. Let cool. Cut into squares or triangles.
8. Lightly sprinkle with powdered sugar if desired.
 

Skinny Cranberry Bliss Bars


Ingredients:

2 cups all-purpose flour
½ tsp. baking soda
¼ tsp. salt
⅛ tsp. cinnamon
⅔ cup sugar
⅔ cup brown sugar, unpacked
¼ cup melted unsalted butter
2 large egg whites
¼ cup unsweetened apple sauce
2 tsp. vanilla extract
⅔ cup white chocolate chips
⅓ cup craisins, chopped
For the Frosting:
1 (8 oz.-⅓ less fat) cream cheese, softened
½ cup confectioners' sugar
⅓ cup craisins
2 oz. white baking chocolate, melted*
½ tsp. vanilla extract

1. Preheat oven to 350º. Lightly spray a 9x13 inch glass pan with baking spray.
2. In a large bowl, combine the flour, baking soda, salt and cinnamon. Set aside.
3. In another bowl, whisk the sugars with the butter, egg, applesauce and vanilla
until light and fluffy.
4. Whisk the dry ingredients into the wet ingredients in two additions until the batter
is very well blended.
5. Fold in white chocolate chips and ⅓ cup craisins.
6. Spread batter onto the baking pan using a spurtle to smooth.
7. Bake 10-14 minutes, until the edges are light brown and toothpick comes out
clean. (Don't over bake or bars will be dry.) Let cool completely on rack.
8. Prepare the frosting: in a large bowl beat the cream cheese, confectioners' sugar
and vanilla until well blended.
9. *Melt the chocolate in microwave for 15 seconds; stir. Heat 15 seconds more; stir.
10. Frost bars and sprinkle with chopped craisins. Drizzle with melted white
chocolate.
11. When the chocolate sets, cut into 15 large squares then cut each square in half
diagonally to create triangles. Store in refrigerator until ready to serve.

Our neighbor baked the Cranberry Chocolate Chip Bars for us often. They are easy to make and delicious. Cranberry Bliss Bars are a seasonal favorite of Starbucks' customers. This recipe is a lighter version of the bars. The preparation is longer than other bars but is well worth the effort.
