2 pounds ground beef
4 tablespoons olive oil
1 onion, chopped
1 green pepper, chopped
4 cloves garlic, minced
1/4 cup parsley, finely chopped
2 jalapeno peppers, finely chopped
3 tablespoons chili powder
2 teaspoons cumin
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cajun
1 can (46 ounces) tomato juice
1 can (28 ounces) diced tomatoes
1 can (15 ounces) tomato sauce
1 can (16 ounces) kidney beans, drained and rinsed
1 can (16 ounces) pinto beans, drained and rinsed
Shredded cheese
Sour cream

Directions:
Directions:
In a large skillet, cook ground beef over medium high heat until no longer pink. Transfer to a bowl, and drain excess grease from skillet. Add olive oil to skillet. Add the onion, green pepper, garlic, parsley, and jalapeno peppers. Cook over medium heat, stirring occasionally, until onions are soft and fragrant, about 5 minutes. Remove from heat, and add the spices.

Add the cooked meat back to the skillet. Add the tomato juice, diced tomatoes, tomato sauce, and beans. Bring to a boil, reduce to medium low, and simmer for 2 hours.

Serve warm with cheese and sour cream.
