Ingredients: 1 (2˝ lb.) pkg. of cleaned frozen squid* 2 (28 oz.) cans Pastene Kitchen Ready tomatoes ˝ to 1 can of water olive oil 1 medium onion, finely chopped 1 garlic clove, chopped 1 tbsp. parsley, finely chopped salt and pepper ˝ to 1 tsp. sugar 1 lb. thin spaghetti or angel hair

Directions:*PREPARE SQUID: 1. Buy frozen and cleaned squid (bodies and tentacles). 2. Defrost and rinse well under cold water. 3. Cut up bodies into pieces (not too small) and leave tentacles whole. 4. Drain well in a colander to prevent adding more water to sauce. 5. When well drained, add to **sauce and cook for about 20-30 minutes. (see following) 6. Taste test to check if squid is cooked. Do not overcook squid as it becomes too tough/chewy. **MAKE SAUCE: 1. Spray pan with cooking spray and coat with olive oil. 2. Add onion and garlic. Sauté lightly. Do not allow garlic to burn. 3. Add tomatoes and water. Bring to a boil then lower to simmer. 4. Add salt, pepper and sugar. Simmer about 45 minutes. 5. Add *prepared squid to sauce and cook for an additional 20 - 30 minutes. 6. Cook pasta as directed. Drain well. 7. Place pasta in bowl and cover with squid sauce. |

Tuna Sauce |

Ingredients: 2-3 (3 oz.) cans solid Italian tuna in olive oil (Genova brand) 2 (28 oz.) cans Pastene Kitchen Ready tomatoes ˝ to 1 can cold water olive oil 1 medium onion, finely chopped 1 garlic clove, chopped 1 tbsp. parsley, finely chopped salt and pepper ˝ tsp. to 1 tsp. sugar 1 lb. thin spaghetti or angel hair
For 1-2 servings use one can of tomatoes and one can of tuna. Just ˝ all ingredients.

Bring to a boil then lower to simmer. 4. Add salt, pepper and sugar. Simmer 45 minutes. 5. Drain oil from tuna. Leave tuna chunky. 6. Just before serving over pasta, add tuna to sauce. Simmer 10 minutes. 7. While simmering cook thin spaghetti or angel hair as directed. 8. Place drained pasta in a bowl and cover with tuna sauce. |

Notes: Grandpa learned the Squid Sauce recipe from Nonna. We always served this on Christmas Eve when we celebrated at our home. We learned the recipe for the surprisingly tasty Tuna Sauce in 1991 from Grandpa's cousins in Italy. It has become popular with our family. A serving of Pasta with Tuna Sauce is pictured in the photo on the divider of this section.
