2 cups of flour
8 or 9 eggs
1 small container cottage cheese
1 small container of ricotta cheese
2-3 bunches of scallions chopped.
1 or 2 sticks of butter

Directions:
Directions:
Mix 2 cups of flour with 6 eggs. Add an egg if mixture is too stiff.
Wrap in plastic and let sit for half an hour or so.

Mix cottage cheese and ricotta cheese (small containers)
Add 2 eggs
Add chopped scallions or onion. (Filling should be gooey but not runny. May add a small amount of flour if it needs thickening.)

Cut chunks from the dough ball and roll out…we make ours kind of thick because we love the dough. Can be rolled thinner if desired. We use a round cutter, add filling, and fold the circle in half, pressing the dough together along the rounded edge. (can use a fork like a pie crust.)

While making the dough, bring about 3 quarts of water to a boil. Add onions and butter to this mixture as well.
After buttons are made, put into boiling water and boil until the half circles rise to the top. We freeze ours in plastic bags with a little juice to allow eating them fried or in the broth.
