Ingredients:

1 (28 oz.) can Pastene Kitchen Ready tomatoes
˝ can cold water
olive oil
1 medium clove garlic, chopped
2 tsp. sugar
black pepper
several fresh or frozen basil leaves
˝ lb. angel hair or cut pasta of choice
Pecorino Romano cheese, grated

Directions:
Directions:
1. Spray pan with cooking spray and coat bottom of pan with olive oil.
2. Add garlic and sauté on low for 1-2 minutes. Do NOT let garlic burn.
3. Add tomatoes and water and stir well
4. Bring tomatoes to a bubble. Lower heat and simmer.
5. When heated, add pepper and sugar. Taste for flavor.
6. Add basil and simmer about 45 minutes stirring occasionally.
7. Cook your preference of pasta according to directions. Drain well.
8. Place pasta in bowl, add sauce and sprinkle with cheese.
 

Pepperoni Sauce

1 stick of pepperoni
1 (28 oz.) can of Pastene Kitchen Ready tomatoes
˝ can cold water
1 clove garlic, chopped
3 tsp. sugar
pepper
several fresh or frozen basil leaves
˝ lb. angel hair or pasta of choice
Pecorino Romano cheese, grated

Directions:
Directions:
1. Spray bottom of pan with cooking spray and coat lightly with olive oil.
Don't use too much as pepperoni will add grease.
2. Peel pepperoni skin by making a cut across length of pepperoni.
Then lift from corner and pull skin off.
3. Cut pepperoni into 2˝ inch pieces. Sauté pieces on each side.
4. Add garlic and sauté. Do not let garlic burn.
5. Add tomatoes and water. Bring to a boil then lower to simmer.
6. Add pepper and sugar (to cut acidity).
7. Cook on low heat for 45-60 minutes until sauce is cooked. Stir occasionally.
8. Cook pasta as directed to desired tenderness. Drain well.
9. Place in bowl. Add sauce. Sprinkle grated cheese as desired.

These two recipes are very tasty sauces that Grandpa learned from Nonna. Both are enjoyed by all. Pepperoni adds a strong spicy flavor to the sauce and is quick and easy to make. A few of our older Grands have added the recipes to their collections.
