12 ounces marinated artichoke hearts
1 onion, minced
1 to 2 cloves garlic, minced
4 large eggs, well beaten
2 tablespoons minced parsley
¼ teaspoon salt
⅛ teaspoon pepper
¼ teaspoon dried oregano, crumbled
⅛ teaspoon liquid hot pepper sauce (optional)
¼ cup fine dry breadcrumbs
2 cups shredded cheddar cheese

Butter an 8-inch square baking pan. Drain marinade from one jar of artichokes into a 10-inch frying pan. Add onions and garlic and sauté until onion is limp, about 5 minutes. Set aside to cool. Discard marinade from the second jar of artichokes; chop all the artichokes and set them aside. To the well beaten eggs, add the cooled onions and garlic, the crumbs, salt, pepper, parsley, oregano, and liquid hot pepper (if using) and mix. Add the artichokes, fold in the cheese. Pour into the prepared pan and bake at 325°F degrees for about 30 minutes. The top should be a rich, golden brown. Cool in pan; cut into 1-inch squares. Serve warm or refrigerate and serve cold.
