Ingredients:
Ingredients:
¼ c. butter, softened
¼ c. shortening
¼ c. packed brown sugar
1 egg, separated
½ tsp. vanilla extract
1 c. all-purpose flour
¼ tsp. salt
¾ c. finely chopped nuts

Directions:
Directions:
Preheat oven to 350º. Mix thoroughly the butter, shortening, sugar, egg yolk, and vanilla. Work in flour and salt until dough holds together. Shape dough by teaspoonfuls into 1” balls. Dip each ball into egg whites, then roll in the nuts, making sure to cover the ball entirely. The nuts must be very finely chopped. Use the “ chop” button on the small processor, not the “ grind” button.Place 1” apart on ungreased baking sheet. Press thumb deeply into center of each. Bake about 10 minutes or until light brown. Immediately remove from baking sheet. Cool, and fill thumbprints with favorite jelly or jam. This is optional. Dan and I don’t care for these filled with any jam, jelly, or chocolate. We also just prefer to mix the nuts into the batter, rather than rolling them in the nuts. Then I just flatten the cookie out a bit with a fork.
