Chicken Pot Pie with Crust


Ingredients:

Filling:
⅓ cup butter
⅓ cup onion, chopped
2 large carrots, peeled and sliced*
3 large potatoes, peeled and cut into chunks*
½ tsp. salt
¼ tsp. pepper
1½ cups low sodium chicken broth
⅓ cup flour
⅔ cup milk
2½ cups cooked chicken or turkey cut into bite size pieces**
1 can peas or cut green beans, drained
1 can corn, drained
*Left over potatoes and carrots can be substituted
**Rotisserie Chicken can be used

Crust:
1 crust from 2ct. pkg. Pillsbury Refrigerated Pie Crust,
softened as directed on package.

1. Preheat oven to 425º. Have deep fluted edged pie plate ready.
2. In skillet, melt butter. Add onion and cook 2 minutes. Add carrots and potatoes.
3. Add enough of broth to cook carrots and potatoes over medium heat. Add S & P.
4. Whisk flour with remaining broth. Add to cooked vegetables and add milk. Stir.
5. Add chicken or turkey and canned vegetables. Mix well. Simmer 3-4 minutes.
6. Remove from heat. Spoon into pie plate.
7. Top with crust that has been rolled out to fit over vegetables. Flute edge of crust
and cut slits in several places in the crust.
8. Place pie ring on top of crust and bake for 35-40 minutes. During last 15 minutes of
baking, remove ring. Bake until crust is golden. Let stand 10 minutes before serving.
 

Pot Pie with Dumplings

Same ingredients as above except for crust
1/2 cup Bisquick mix

1 egg
1/4 cup milk

Directions:
1. Prepare chicken and vegetables as above. Place in pie plate.
2. Preheat oven to 375º. In a small bowl stir together the Bisquick, egg and milk.
3. Spoon Bisquick mixture onto filling 1 heaping tbsp. at a time.
4. Space as evenly as you can, but don't spread them together.
5. Bake 35-40 minutes until crust is golden. Serve immediately.
 

Pot Pie with Grands Biscuits

Same ingredients as above except for crust.
1 (10.2oz) can refrigerated Pillsbury Grands Flaky Layers Original Biscuits

Directions:
Directions:
1. Prepare chicken and vegetables as above. Place in pie plate or casserole.
2. Preheat oven to 375º. Pull each biscuit apart into 2 layers; cut each into 4 pieces.
3. Place biscuit pieces over hot mixture with space in between.
4. Bake 16-20 minutes until biscuits are light golden brown.

The chicken pot pie recipe was originally from Auntie Peggy. Grandma has tweaked it to suit Grandpa's taste. It is one of his favorite comfort foods in the cold months.
