½ cup of Spectrum Culinay™ Shortening
¼ cup of Organic Peanut Butter
½ cup of Organic Cane Sugar
½ cup of Organic Brown Sugar (packed)
1 egg
1 teaspoon of Singing Dog® Vanilla
1 ¾ cups of All Purpose Gluten-Free Baking Flour
1 teaspoon of Baking Soda
½ teaspoon of salt
1 Dark Chocolate Bar

Directions:
1. Pre-heat oven at 350º.
2. Blend the shortening, peanut butter, and sugars together.
3. Add 1 egg and vanilla. Beat all together.
4. In a separate bowl, mix the flour, baking soda and salt. Then add with the other mix.
5. Shape dough into balls, roll in excess sugar and place on a greased cookie sheet.
6. Bake for 8-10.
7. Remove from oven and place one square of chocolate in the center of each cookie.
8. Bake for 3-5 minutes more.
