1 lb. beef chuck or round steak beaten
1/4 c. soy sauce
1 clove garlic
1/2 tsp. ginger
1/4 c. salad oil
1 c. green onions thinly sliced
1 c. red or green bell pepper, cut in strips
2 stalks celery thinly sliced
1 T. cornstarch or flour
1 c. water

Slice meat across grain 1/8 in. thick.
Combine soy sauce garlic and ginger.Add to beef , toss lightly and set aside.Prepare veg.
Heat oil in large frying pan.Add beef and toss over high heat til browned.Taste meat if it is not tender , cover and simmer for 30 to 40 min. over low heat.. Turn heat up and add veg. Toss until veg. are done. Can be slightly crisp.
About 15 to 20 min. Mix cornstarch or flour with water. Add to pan. Stir and cook until thickened.
Serve over rice.
