1 cup arborio rice
1/4 tsp kosher salt
5 cups whole milk
1/2 cup sugar
1/2 tsp orange-flower (blossom) water

Directions:
Directions:
Bring rice, salt, and 1 1/2 cups water to a boil in a medium saucepan. Reduce heat, partially cover, and simmer until water is almost completely absorbed, 6-8 minutes. Add milk, return to a simmer, and cook, stirring occasionally, until rice is tender and milk is thickened, 30-35 minutes. Add sugar and *orange flower(blossom) water and cook, stirring, until sugar is dissolved, about 1 minute longer. Let cool slightly.
I usually put it in a large bowl then in the fridge.

*You can find Orange Blossom water at the grocery store near the flavored bottles such as vanilla in the baking section. If you can't find it, I have use Cointreau (orange liqueur) which works great too.

This is your father's favorite dessert recipe. He says his grandmother in France would make it when he was a boy. I once used Cointreau liqueur because I could not find Orange Blossom water at the grocery store. It actually tasted awesome, but Liqueur is much more expensive then a small bottle of Orange Blossom Water (which actually is kind of expensive too).

Sometimes, your dad likes to add more milk because he likes it soupy. I prefer a thicker version, but I think the more milk was how his grandmother made it.
