Ingredients:  
Scallops - Frozen Bay Scallops work - or you can use scallop pieces or whole cut up
Shrimp - Frozen salad shrimp - or larger cut up
Peppers - different colors - preferably with flat bottoms that stand by themselves
Onions
Garlic
Olive oil
Spices - to taste [Old Bay, pepper, Italian, etc
Ritz crackers - crushed
Melted unsalted butter
Cheese - shredded or small chunks [swiss, cheddar, mozzarella, etc.] Optional

Directions:
Directions:
Saute` onions and garlic in a large pan on medium heat
Cut tops off peppers and clean out seeds - cut peppers around stems, chop and add to pan
Add scallops, shrimp and spices and cook until done
Place mixture in bowl and add crushed crackers and melted butter - mix well
Spoon into empty peppers
Bake at 400 for 30-40 minutes until peppers soften and cracker mixture is starting to brown
Place cheese on top
Bake for 10 more minutes until cheese is melted
Let stand for 5 minutes and serve

One of my favorite things that Yvonne made occasionally. The Ritz crackers give it a unique buttery flavor. I make it sometimes but can never quite get it the same.
