Kernels from 2 ears of corn
1 egg
1/4c flour
1/4c grated Parmesan
1/4c chopped basil
1T cornstarch
1/2tsp salt
pepper

Directions:
Directions:
Cut the kernels off the ears of corn or 1 3/4 cups
Pulse half the corn and egg in a food processor, transfer to a bowl.
Mix in the remaining ingredients.
Cook spoonfuls in an oiled skillet until golden, 3 to 4 mins per side
