Directions:Prepare pizza dough, punch down to release any air bubbles then divide in half. On lightly floured surface, roll out each half into a large rectangle (10"x12"). To prevent the filling from making pizza rolls soggy, brush the tops lightly with 1 teaspoon olive oil. Use your fingers to push dents into the surface of the dough rectangles to prevent bubbling. Spread 1/3 cup pizza sauce on each rectangle. Sprinkle lightly with Italian seasoning and garlic powder and 1/2 cup shredded mozzarella evenly over sauce, then top with pepperoni slices. Carefully roll dough rectangles into tight logs and place onto prepared baking sheet, seam side down. Chill uncovered, in refrigerator for at least 20 minutes. Chilling prevents rolls from falling apart as you slice. Preheat oven to 400°F (204°C). Line two large baking sheets with parchment paper. Remove logs from refrigerator and cut each into 12 1" slices. Pour cornmeal into a bowl, dip the bottom of each roll into cornmeal and place on baking sheet, cornmeal side down. Sprinkle tops of the rolls with extra cheese. Bake 15-20 minutes or until sides are lightly browned. Cool 5 minutes, then serve with fresh basil on top (if desired) and extra pizza sauce for dipping. |
